Chocolate....

oh yeah! ummmmm!!
Ok, ya gotta know what I'm thinkin' about! I am such a choco-holic! My newest obsession is Dove Dark Chocolate, but any kind of chocolate will do! Hot cocoa, cake, brownies, kisses, white, milk or dark, German, Swiss, Hershey's, fudge, Halloween, Christmas or Easter, it just doesn't matter!

This morning I received an e-mail from a friend with some 'Chocolate Quotes' and that was all it took to set me off today...

With encouragement like this, don't ya even try to resist.

I have this theory that chocolate slows down the aging process....
It may not be true, but do I dare take the chance?
I've been trying to control myself. We have no chocolate candy in the house and I really haven't wanted to give into it entirely..... so, I made Microwave Cashew Brittle hoping that would help... Steve/Dad's been bugging me for some for a long time, so I thought I would make points with it and maybe get my mind off chocolate! NOT! It didn't even touch it! Now I guess I'll just have to break down and make some Microwave Rocky Road Fudge... I have the makin's so I don't even have to go out for it...

Just in case you may be having a craving, too, here's the recipe.... It's so yummy and easy!

Microwave Rocky Road Fudge
3 Cups Chocolate Chips (I like 1 Cup each of Milk, Semi-sweet, and White chips)
1 can sweetened condensed milk
1/4 Cup butter or margarine
1 Cup chopped nuts, (More or less to your liking)
2 Cups Mini-marshmallows, firmly packed
Dash salt
1/2 t. vanilla

Place chocolate chips, butter & condensed milk in 8 C (2 qt.) microwave-safe bowl. Microwave at medium (50%) until chocolate chips are melted, about 5 minutes, stirring once or twice throughout. Sprinkle with the dash of salt and add vanilla and stir in. Stir in nuts, add marshmallows and stir in just a little. (Don't mix too much or the marshmallows melt in too much instead of being separate and visible.) Pour into a 9"x13" baking dish sprayed with Pam and press down into dish. (Without marshmallows, this will fit into a 8"x8" pan.)

Ok, I'm signing off now and heading for the kitchen.... Hopefully he will be ok with fudge for supper!

Funny Mom. I guess I got my love of dark chocolate from you ... it's in the blood? Every time I tell anybody that I love dark, they turn their nose up. That recipe sounds divine, but don't you think it should include some pecans? Stop fighting it, just nibble ...

Absolutely... Pecans.... it calls for at least a cup of nuts if you want them.... WE DO!!! I put close to 2 cups of nuts in, but whatever kind of nuts you like tastes great! We use a lot of almonds since we came home from Utah with lots of them we ordered from the Church's nut farm. (I'm sure our love for dark chocolate is in the blood!! tee hee) Or just environmental... I did make some yesterday and used really old, hard marshmallows and it was still terrific... (better with fresh, however) I even put in about 3/4 cup of cinnamon chips... a different twist and I liked it. Glad you liked the recipe!
